Prachi Pandit
If you have ever held a lab report and felt more lost than informed, Prachi is the person who makes it make sense. She reads biochemistry the way most people read a story, then does the harder thing: she turns it into food, habits, and a way of living that fits your real life, not an idealised one.
Some of what she knows about food came from life, not literature: that nutrition cannot be isolated, that it is woven into culture, identity, and memory. That understanding drives her scientific approach. Her work bridges research and human behaviour: from investigating genetic markers in maternal nutrition to designing government-endorsed programmes, from publishing peer-reviewed research to providing precision clinical care for metabolic disease.
A Master's in Medical Biochemistry and over two decades across the lab, the field, public health and the clinic give her clinical practice real rigour. Her peer-reviewed work appears in journals including Diabetes Care, Diabetologia, the International Journal of Epidemiology and the European Journal of Clinical Nutrition, alongside book chapters in Pancreatic Islet Biology (Springer) and Vitamin B12: Advances and Insights (Science Publishers).
But the part she loves most is quieter: teaching people to rebuild their relationship with food, through supermarket walks, cookouts, and long, unhurried meals. Early on she learned that information alone rarely changes how people eat. Knowing biochemistry is one thing; walking with someone through the slow work of changing a habit is another. That realization led her to train as an Integrative Nutrition Health Coach (IIN, New York), and it is the skill she now leans on most: not telling people what the science says, but helping them live it.
Organisations call on her for something broader. Working where nutrition, behaviour change, sustainability and farming meet, she helps them build strategies that last, from a single talk to a school canteen or office menu rebuilt from the science up. It is the same thinking she carries as Senior Consultant to the Shiv Nadar Foundation, leading MoolGyan, its food literacy and farm-based learning programme.

Sanjeev Galande is a biologist and one of India's leading scientists in chromatin biology and epigenetics. As Arbuza's Scientific Advisor for genomics and epigenomics, Sanjeev provides the foundational scientific framework that underpins our systems biology approach. His expertise ensures that Arbuza's protocols are grounded not just in nutritional science but in a rigorous understanding of how genetic and epigenetic factors shape individual metabolic responses.
His research has been published in leading peer-reviewed journals and has been funded by major national and international agencies. He brings to Arbuza the same precision that drives his laboratory work — the conviction that biology is not fate, and that molecular-level understanding can translate into meaningfully better health outcomes.

François Iris
François Iris is a systems biologist based in Paris, with decades of experience building computational and theoretical frameworks for understanding complex biological systems. His work spans network biology, pharmacogenomics, and the systems-level modelling of disease, fields at the frontier of precision medicine.
As Arbuza's Scientific Advisor for Systems Biology, François contributes the lens through which the body is read not as a collection of isolated numbers, but as a dynamic, interconnected network, where a change in one pathway ripples across many others. This systems view is one of the scientific foundations Arbuza draws on when interpreting biomarkers and shaping protocols.
His advisory work alongside Prachi and Sanjeev brings molecular biology and systems-level thinking into conversation with clinical nutrition, giving Arbuza access to a depth of scientific reasoning that most nutrition practices cannot reach

Fatema Rajgara
Fatema Rajgara is the culinary and nutritional architect behind Arbuza's recipe library, a 390-page clinical recipe collection (and still growing) that is one of the most comprehensive food resources in the practice. Her work ensures that the science Arbuza designs on paper becomes food that clients actually want to eat.
What sets Fatema's work apart is its dual precision. Every recipe she creates is nutritionally calibrated to support the clinical protocols Arbuza builds, and at the same time designed to be culturally resonant, practical, and genuinely delicious. She understands that sticking to a nutrition protocol is rarely a willpower problem. More often it is a food design problem, and that is the problem she solves.
Her library spans everything from gut-healing meals and anti-inflammatory plans to high-protein breakfasts, travel-ready snacks, and festive occasions, so clients never feel their clinical programme asks them to abandon their food culture. She is also the person you want in your corner when you are travelling or eating out and have no idea what to order; a quick message to Fatema usually solves it. Beyond Arbuza, she runs her own granola label, and she loves teaching children about food and health.

Neha Katekar
Neha Katekar brings a rare combination of research depth and clinical experience to the Arbuza team. Her background spans nutritional science, diabetes education, and the kind of systematic, evidence-based practice that comes from working at the intersection of research and direct patient care.
As a certified Diabetes Educator, Neha has a particular expertise in metabolic health, understanding the nuanced interplay of blood glucose regulation, insulin sensitivity, dietary behaviour, and lifestyle factors that drives outcomes in conditions like Type 2 diabetes, prediabetes, and metabolic syndrome. Her clinical work is grounded in the latest evidence and delivered with the sensitivity and practical orientation that complex chronic conditions require.
At Arbuza, Neha supports clinical delivery and brings the kind of research-informed, patient-centred perspective that elevates the quality and rigour of every client interaction.
